With clear vision and great energy, Ignacio Blanco joined GLH Singular Restaurants in 2021 to take the group to the next level, consolidating its position as a leader in the industry.

With a degree in Business Administration and a master’s in finance from Saint Louis University (USA), Ignacio brings over 25 years of international experience leading business, sales, and marketing areas at major multinational companies such as LATAM Airlines, General Motors, P&G, and Diageo.

His entry in the restaurant industry has been defined by a strategic, people-centered, and strongly customer-oriented approach.

Ignacio Blanco

CEO

Gonzalo holds a degree in Business Administration and an MBA from ESCP Business School. He has been at the heart of GLH Singular Restaurants since its inception. After nine years in the communications sector, he co-founded GLH and led the commercial and events department for six years.

His entrepreneurial vision and sensitivity to spaces with personality have been key to shaping the group as we know it today. Always attentive to detail and with a unique approach and understanding of hospitality, he has played an active role in the conceptualization of spaces.

Gonzalo brings a creative and strategic mindset to the project, focused on making each restaurant a place with soul. In 2021, he took on the role of COO/CXO to support the company’s growth plan.

Gonzalo López Hermida

COO

He holds a degree in Economics and an MBA from IE Business School. He has over 20 years of experience as a CFO in the retail sector (Leroy Merlin, PC City, Bodybell) and has spent the last few years in the organized restaurant industry (Foodbox). He has been with the company for nearly three years.

Enrique Godoy

CFO

Passionate about cooking and with over 25 years of experience in the kitchen, Mariano is the culinary soul of GLH Singular Restaurants.

His career includes renowned companies such as Nodo, Pan de Lujo, and Filandón, where he developed a gastronomic vision rooted in respect for the product and creativity with purpose.

He is part of the group since 2018 and was responsible for bringing “UMO” restaurant to life. Shortly after, he took on the role of Culinary Director, leading the gastronomic concept across all our venues with a clear philosophy: honest cuisine, full of flavor, that moves and connects.

Guillermo Oliva

Head of HR

He holds a degree in Psychology and a master’s in human resources management from Kühnel Business School. With over 10 years of experience in the field, he joined GLH in 2019 and was appointed Head of Human Resources in 2024.

Elena Triguero

Head of Assets

She holds a degree in Architecture from Universidad Francisco de Vitoria. She began her professional career at an architecture studio, where she worked for four years before joining the Project Management team at CBRE, and later Grupo Vips. She became part of the GLH team in 2022.

Carlos Blasco

Head of Purchasing

He holds a degree in Business Administration and Management, along with a Master’s in Logistics and Supply Chain Management. With over 10 years of experience in the purchasing field across various industries, he joined GLH in 2024.

Quike Pedraz

Head of Gastro

With over 20 years of culinary experience, he has worked in Michelin-starred and Repsol Sun-awarded restaurants, serving as Head Chef and Executive Chef. He joined GLH in 2021 and currently leads the kitchen at Grupo Larrumba Holding. He has also been recognized in several national culinary competitions.

Iñaki Quintana

Head of F&B

Trained at the Madrid School of Hospitality and Tourism, he is currently Executive Chef and Revenue Manager, with over 17 years of experience in the hospitality industry. He served as Executive Chef at Meliá Galgos and worked alongside Alberto Chicote at Nodo. He joined GLH in 2016.

Sergio Palomares

Head Service Operations

He began his career at Marisquería Combarro and trained in sommelier and hospitality management at the Madrid Chamber of Commerce. He held management roles at Grupo Paraguas and Grupo Mosh before joining GLH in 2020, where he has led openings and the management and operations at Río Grande.

Andrés Rodríguez

Head Service Operations

He holds a degree in Economics from the Complutense University of Madrid and has over 20 years of experience in the hospitality industry. He joined GLH in 2016 and has served as Director of both Marieta and Aravaca.

Alba Bravo

Finance Manager

Bachelor’s degree in business administration and management. After several years working as a consultant in the retail sector, she joined GLH in 2021 as an accounting technician, and now leads the accounting and finance team.

María Agustí

PR&Comms Manager

She holds a degree in Protocol and Institutional Relations, as well as a master’s in Digital Marketing. She has over 10 years of experience in communications, public relations, and events—particularly in the gastronomy sector—she has worked in high-profile environments such as MasterChef Spain. She joined GLH in 2019.

Agustina Moss

Cost Controller Manager

She holds a degree in Business Administration. She began her career in accounting, which provided her with a solid financial and analytical foundation. She joined the GLH Finance team in 2022.

Helena Nosti

Booking Manager

She holds a degree in Psychology from San Pablo CEU University. She joined GLH in 2021 as an Account Executive in the commercial department. After standing out for her business acumen and strong results, she was appointed Booking Manager in 2024 to lead the reservations department.
